Cherry Coke Cocktails & Christmas Crack

Last night I had a very fun night with my friend Katherine. She has recently discovered Pinterest and was in a baking/crafting mood. For her, this is a big deal. She picked out a cocktail for us to make and I picked out a desert. Both were very delicious. Our time together is always too short. But it’s always wonderful. I would like to share with you the recipes we made.

Cherry Coke Cocktail

  • 1/2 Cup of Coca-Cola
  • 1 1/2 TBSP of Grenadine
  • 2 ox of Captain Morgan
  • Cherrys (for garnish)

Mix all ingredients in a 8 oz glass with a few cubes of ice. Enjoy!

Christmas Crack

CAUTION: Addicting. Very very addicting.

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 2 cups semi-sweet chocolate chips
  • 40 saltine crackers

Preheat oven to 350ºF. Line cookie sheet with foil. Lay a flat layer of crackers out on the foil. Melt the sugar and butter until a boil is reached. Reduce the heat and simmer, uncovered, for 5-6 minutes or until mixture is thickened and sugar is completely dissolved. Pour this mixture over the crackers and spread to coat evenly. Bake for 5-8 minutes, or until the toffee becomes bubbly. After removing the pan from the oven, let it sit for 3-5 minutes. Sprinkle on the chocolate chips, let them soften and melt, and then spread them into an even layer.We spinkled some sea salt on the chocolate.
