If you have followed my blog for any amount of time you know that I really enjoy baking with cake mix. It gives cookies a certain fluffiness that other cookies can’t seem to find. I have some friends who really, and I mean really, enjoy almond flavored desserts. Their wedding cake? A 4 tier white almond cake with almond butter cream. They talk about that cake every year at this time, these cookies were inspired by that cake!
We went over to their house to see their beautiful new baby girl, who arrived 3 days before their 5th wedding anniversary. I love this couple. They are true friends and so for them, I made up these Almond Cake Cookies.
Almond Cake Cookies
- 1 box Betty Crocker Classic White Cake Mix
- 2 eggs
- 1 stick of salted butter, melted
- 2 teaspoons of almond extract
Melt butter, let cool. Add eggs, cake mix, and extract, blend with an electric mixer on slow until well blended. Bake in a 350 degree oven for 10 minute or until cookies are slightly brown around the edges. Cool completely and enjoy!
